MARGRET & LUDGER
BOLKART-FETZ
Hosts
When Margret and Luggi met in 1985, very soon they had many ambitious ideas and dreams for a common future. Of course they did not know at that time that, one day, they would own the smallest 4-star hotel in Germany, a restaurant with Germany's southernmost Michelin star and a rustic hunting lodge (the Jagdhaus). In 1992, they ventured the step to independence with the Maximilians and it was followed by 11 years as a one-man and one-woman operation where, almost in passing, the sons Ludwig and Lucas saw the light of day. Originated from the former cowshed, property of the Bolkart family built in 1911, the Maximilians managed to achieve culinary excellence in the Allgäu. In 2003 the country house had been remodeled to become today's 4-star hotel Freiberg and for the first time more helping hands became part of the team. The kitchen was expanded and the cozy champagne garden was opened for the summer months. In 2011 the Jagdhaus including the beer garden was added. It went forward in small steps: Since 2010, the Maximilians is awarded with one star in the Michelin Guide, in 2011, the Freiberg became the Romantic Hotel. When Margret and Luggi met for the first time 28 years ago, it was love at first sight. Today also, as in those days, they still have many common dreams they want to realize.

NELI
Cleaning fairy
LANGUAGE BARRIER, NO THANK YOU!
Communication is a fine thing as long as it works. However, you know how to help yourself if you cannot communicate with words. There are hands and feet. There is body language. Among scientists it is called nonverbal communication. And it works. Meanwhile we understand each other without big words. And we are very happy that we have Neli with us.
MAX BOLKART
Grandpa
WHO HAS AN IN-HOUSE LEGEND?
He is part of the inventory in the Freiberg - Grandpa Max. Four times German champion, fourth and sixth at the Olympics. And of course in 1959/60, the first West German overall winner of the Four Hills Tournament. At that time, with baggy pants and woolly hat. Ask him what he has been given as a prize (just between us ... it was a pressure cooker). Today he can be found almost daily in our fireplace room, where he is always open for a "Huigarte" (dialect for "a little chat"). There you can also admire the trophies he has collected during his sporting career. The absolute highlight: Let yourself be carried away to the world of ski jumpers. While visiting the Oberstdorf ski jumping hill he will tell you with shining eyes, how he did his first jump attempts at the age of 16. The wearer of the Order of Merit of the Federal Republic of Germany and the Silver Laurel Leaf, whose trademark were the forward stretched mittens in flight – with now more than 80 years: He is still fit and a passionate sportsman through and through.
ALEXANDRA EISELE
Breakfast Service
INFLEXIBLE? I CALL IT WELL ORGANIZED
According to employees the wife of chef Tobias Eisele is the most inflexible. The reason for that is that she has 2 children. BUT: She is always there when you need her. That means, she is simply perfectly organized. And even if she sinks a knife into the leather pants of a guest´s backside, no problem. As long as no one gets hurt, that is all part of the plan. Actually Alexandra is too good for this world, because she simply can´t say no. She is the incarnation of helpfulness. And really proud that her husband has earned the Michelin Star for the Maximilians.
